Unlikely Vegan: Holiday Edition

Jay is on a mission to create a holiday meal that his entire family will enjoy.   Tofurkey isn’t going to cut it.  Wisely, Jay turns to a vegan chef to create a memorable holiday dish.

Vegan Shepherd’s Pie

Boil:  10-12 medium potatoes

Mash with approx. ½ cup vegan butter, garlic, salt and pepper

In large frying pan, sauté approx. 10 minutes:

3 tbsp. oil

2 medium chopped carrots

4 cloves garlic, chopped

1 medium Spanish onion, chopped

½ tsp. oregano

½ tsp. thyme

½ tsp. basil

Add: and continue to simmer 30-45 minutes

2 packages St Yves original vegetable ground

1 cup finely chopped mushrooms

¾ cup vegetable stock

¾ cup red wine

1 – 341 ml can of corn (or frozen)

1 – 398 ml can peas (or frozen)

salt and pepper to taste

4-6 splashes of hot sauce or Tabasco

350 degree oven for approx. 45 minutes

YIELD: 8 servings
